Its terracotta top and bottom create the perfect environment for developing slow-cooked flavor.

Being a great fan of Morocco, I most often stick to the traditional dishes. Moroccans themselves are quite creative, but the buck stops when it gets too out of the box or out of range for ingredients out of their reach.

&gt; 3 cups sweet potatoes (cooked and mashed)
&gt; 2 tablespoons butter

The  jet that causes the water to cascade is nicknamed "the fountain of the blanket-like water." This morning I saw the bread from yesterday and wanted toast. I thought, "this isn't just any toast. This is Maorizio's rustic loaf perfect for bruschetta". I don't usually eat bruschetta for breakfast..but a flat of my good friend Michael's heirloom tomatoes were staring me in the face. They are so sweet and delicious, I thought to myself, "better than jam".

Ajo Blanco: Chilled Spanish Almond Soup

Serves 4

&gt; 1 slice of stale bread, crust removed
&gt; 1/2 cup water
&gt; 1 garlic clove
&gt; salt
&gt; 1/4 cup blanched almonds
&gt; 1 Tblsp sherry vinegar
&gt; 1/2 cup olive oil
&gt; 2 cups ice water
&gt; 24 grapes, green and seedless

Soak bread in water for 1 minute. Squeeze dry.
Pound garlic with salt into a paste.

Our first morning sail took us around to the south side of Procida, to see the panoramic pastel houses that grace the island, all bunched together like a bee colony.

Historically, the various house colors had a purpose. A sailor could spot his house from afar and see if his wife was waiting for him in the window.

The honey colored beaches of Morocco’s Atlantic coast stretch out, scalloping around rock promontories, offering seemingly endless miles to nowhere.

The only way to see them is by foot, by boat, by donkey, or by camel. Camel is the transportation of choice in these parts and nothing sounded better to me than the contrast of a camel, ship of the desert on sand, flanked by an endless ocean.

I was not surprised when Ms. Kinney told me she wanted to bring her husband of 30 years along on her trip to Morocco.

1 cup chopped dried Calimyrna figs (or one's you've dried yourself)
1/3 cup water
1/2 cup pitted Kalamata olives, chopped
2 T extra-virgin olive oil
1 T balsamic vinegar
1 T drained and rinsed capers, chopped
1 1/2 t chopped fresh thyme
1/2 cup toasted and chopped walnuts

Combine figs and water in a heavy medium saucepan. Devigarh, my favorite place aesthetically, is an 18th century Palace fort that royally commands the valley, looking out over the Aravalli hills. Bo-chic in style, the interiors are minimalist yet traditional, leaving more out than put in. An awesome aesthetic, if you like austere five-star elegance—a bit "Indian Zen."

The Lake Palace Hotel was conceived (in romance?) and built in 1746 by Marharana Jagat Singh II. It spreads across a four acre island, a complete vision of white marble.

To be an affineur, is to be an expert on aging. Of cheese.

In St. Remy de Provence,  cheese makers bring their cheeses to this shop, where the resident affineur will take their product and put it in the ripening cellar. An affineur is sometimes described as the "foster parent of the cheese," overseeing its development with a keen sense for when its flavors will peak.

In Venice on the vaporetto, I passed this boat with the name of Citta di Chioggia'. Chioggia is a mini-Venice located on a small island at the southern entrance to the lagoon, which I passed coming in from Croatia, amazed how long the lagoon stretched before we actually arrived close to the center. A water world of canals and boats, Chioggia is also known for its unique beet.

We pulled into Ferrierola at night, to a lovely Kurdish supper of cumin-scented  yellow dahl with lemon.  Hirsh, a neighboring cook, had provided a warm welcome.

Some thought me silly to fly to Paris from Florence, destination Provence. To go from south to North to South did not compute. Some have no imagination. To glimpse the grand avenue of the Champs-Elysees, the Seine, or to sleep in the quaint haunt of Saint Germaine, is reason alone to visit the capitol of 'des artiste!' even for an overnight. To dine is another.

Florence, awake all the night from 6 pm to 6 am with open studios, museums, music, street performers and a swarm of 100,000 people, for 'Una Notte Bianca' White Night. Frescobaldi offered wine in the open antique shops and breakfast was offered in the Palazzo Vecchio at 5 am. It was one long aperitivo and Florence itself was a circus tent.

For years I have heard about this oasis of all things delicious in Ann Arbor, Michigan. A Deli, no less, in the historic district on the north end of downtown on Detroit Street.

CHICKEN TAGINE WITH PRESERVED LEMONS, OLIVES &amp; FRESH CORIANDER

1 chicken, separated into drum, thigh, breast, etc.
2 onion, sliced
4 cloves garlic
a bouquet of fresh parsley and cilantro
4 T olive oil
2 t ginger powder
1/2 tsp turmeric
1 tsp ground cinnamon 
a pinch of saffron
salt and pepper to taste
2 preserved lemons
1/2 cup purple olives

This was a song made famous by Vittorio de Sica,'Parlami d'amore Mariu!'Sandro inserted my name and added Sue so it would rhyme with Mariu. I am sure he sang it to me over and over again as I seemed to be in constant chronic heartache.
